A vibrant and delicious pasta salad perfect for potlucks and gatherings, combining colorful veggies, Italian flavors, and a simple dressing.
Ingredients
- Bowtie or rotini pasta
- Cherry tomatoes, halved
- Bell peppers, diced
- Red onion, chopped
- Olives, black or green
- Pepperoni or salami (optional)
- Chickpeas (optional)
- Mozzarella pearls or grated parmesan
- Olive oil
- Red wine vinegar
- Italian seasoning
- Salt and pepper, to taste
Instructions
- Boil water in a large pot and add salt.
- Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water.
- Chop the vegetables while the pasta cooks.
- In a big bowl, combine the cooked pasta, chopped veggies, chosen protein, and cheese.
- In a small bowl, whisk together the dressing ingredients and pour over the pasta salad. Toss well to combine.
- Cover and chill in the fridge for at least an hour to allow flavors to meld.
Notes
For best flavor, allow the salad to chill longer. Adjust seasoning to taste before serving.
