Juicy grilled chicken breasts marinated in a zesty lemon and herb mixture, perfect for any weeknight dinner.
Ingredients

- 4 boneless, skinless chicken breasts
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- A mix of fresh herbs (parsley, thyme, and rosemary)
- Salt and pepper, to taste
- 1 teaspoon lemon zest
Instructions
- Mix olive oil, lemon juice, minced garlic, chopped herbs, salt, and pepper in a bowl. Add lemon zest.
- Place chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and shake well to coat the chicken.
- Chill in the fridge for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grease the grill grates lightly.
- Remove chicken from the marinade, discarding the leftover marinade. Grill chicken for about 6-7 minutes on each side, until the internal temperature reaches 165°F (75°C).
- Let chicken rest for a few minutes before serving.
Notes
Don’t overcook the chicken to prevent it from drying out. Serve with lemon wedges for extra flavor.
