Description

Juicy grilled chicken breasts marinated in a zesty lemon and herb mixture, perfect for any weeknight dinner.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • A mix of fresh herbs (parsley, thyme, and rosemary)
  • Salt and pepper, to taste
  • 1 teaspoon lemon zest

Instructions

  1. Mix olive oil, lemon juice, minced garlic, chopped herbs, salt, and pepper in a bowl. Add lemon zest.
  2. Place chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and shake well to coat the chicken.
  3. Chill in the fridge for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grease the grill grates lightly.
  6. Remove chicken from the marinade, discarding the leftover marinade. Grill chicken for about 6-7 minutes on each side, until the internal temperature reaches 165°F (75°C).
  7. Let chicken rest for a few minutes before serving.

Notes

Don’t overcook the chicken to prevent it from drying out. Serve with lemon wedges for extra flavor.
