Ingredients

- 2 cups of spinach
- 1 cup of kale, chopped
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 avocado, sliced
- 1 cup of cherry tomatoes, halved
- ¼ cup of parsley, chopped
- ¼ cup of yogurt (or a plant-based alternative)
- 2 tablespoons of tahini (or avocado)
- Juice of 1 lemon
- 1–2 cloves of garlic, minced
- Salt and pepper to taste
- Optional: Nuts or seeds for crunch
Instructions
- Prepare the Veggies: Wash and chop all your veggies.
- Make the Dressing: In a bowl, mix the yogurt, tahini, lemon juice, minced garlic, salt, and pepper.
- Combine: In a large salad bowl, combine your greens, veggies, and dressing. Toss well.
- Top It Off: Finish with nuts or seeds and an extra squeeze of lemon if desired.
