Description

A vibrant and easy-to-make Greek pasta salad featuring tortellini, fresh veggies, feta cheese, and a zesty dressing.


Ingredients

  • 12 oz. Tortellini (frozen or fresh)
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Red onion, thinly sliced
  • 1 cup Bell pepper, diced
  • 1/4 cup Fresh parsley or basil, chopped
  • 2 tbsp Lemon juice, freshly squeezed
  • 3 tbsp Olive oil, extra virgin
  • Salt and pepper, to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and rinse under cold water.
  2. Chop cucumber, bell pepper, onion, and slice cherry tomatoes and olives.
  3. In a large bowl, combine tortellini, veggies, olives, and feta.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper; drizzle over salad and toss gently.
  5. Let the salad chill in the fridge for at least 30 minutes.
  6. Serve in bowls and garnish with extra feta or fresh herbs if desired.

Notes

For added flavor, consider including spinach, grilled chicken, avocado, or artichokes.
