Description
A vibrant and easy-to-make Greek pasta salad featuring tortellini, fresh veggies, feta cheese, and a zesty dressing.
Ingredients

- 12 oz. Tortellini (frozen or fresh)
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup Feta cheese, crumbled
- 1/4 cup Red onion, thinly sliced
- 1 cup Bell pepper, diced
- 1/4 cup Fresh parsley or basil, chopped
- 2 tbsp Lemon juice, freshly squeezed
- 3 tbsp Olive oil, extra virgin
- Salt and pepper, to taste
Instructions
- Cook the tortellini according to package instructions; drain and rinse under cold water.
- Chop cucumber, bell pepper, onion, and slice cherry tomatoes and olives.
- In a large bowl, combine tortellini, veggies, olives, and feta.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper; drizzle over salad and toss gently.
- Let the salad chill in the fridge for at least 30 minutes.
- Serve in bowls and garnish with extra feta or fresh herbs if desired.
Notes
For added flavor, consider including spinach, grilled chicken, avocado, or artichokes.
