A vibrant and refreshing Greek Pasta Salad, packed with flavors from olives, feta, and fresh veggies, perfect for picnics and potlucks.
Ingredients

- 8 ounces rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red onion, thinly sliced
- 1 cup feta cheese, crumbled
- ½ cup Kalamata olives, pitted and sliced
- ¼ cup fresh basil or parsley, chopped
- â…“ cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cooks, chop the tomatoes, cucumber, and red onion.
- In a large bowl, combine the pasta, veggies, olives, cheese, and herbs. Mix gently.
- In a small bowl, whisk together the olive oil, vinegar, lemon juice, salt, and pepper. Drizzle over the pasta mix.
- Toss everything until evenly coated.
- Cover and let it sit in the fridge for at least 30 minutes before serving.
- Serve chilled and enjoy!
