Description

A vibrant and refreshing Greek Pasta Salad, packed with flavors from olives, feta, and fresh veggies, perfect for picnics and potlucks.


Ingredients

  • 8 ounces rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • ½ cup Kalamata olives, pitted and sliced
  • ¼ cup fresh basil or parsley, chopped
  • â…“ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop the tomatoes, cucumber, and red onion.
  3. In a large bowl, combine the pasta, veggies, olives, cheese, and herbs. Mix gently.
  4. In a small bowl, whisk together the olive oil, vinegar, lemon juice, salt, and pepper. Drizzle over the pasta mix.
  5. Toss everything until evenly coated.
  6. Cover and let it sit in the fridge for at least 30 minutes before serving.
  7. Serve chilled and enjoy!
