Description

A zesty and flavorful rice dish that combines fluffy rice with lemon and fresh herbs, perfect as a side or main dish.


Ingredients

Scale
  • 2 cups long-grain rice (like basmati or jasmine)
  • 4 cups chicken or vegetable broth
  • 1 large lemon (zested and juiced)
  • 1/4 cup olive oil
  • 1 medium onion (diced)
  • 23 cloves garlic (minced)
  • Fresh herbs (like parsley or dill, to sprinkle on top)
  • Salt and pepper (to taste)
  • Optional: Vegetables (like peas, bell peppers, or spinach)
  • Optional: Lemon slices for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a pot over medium heat and sauté the diced onion until translucent.
  3. Add minced garlic and cook for another minute.
  4. Stir in the rinsed rice and cook for a couple of minutes.
  5. Pour in the broth and bring to a boil, then add salt and pepper to taste.
  6. Reduce heat to low, cover pot, and let simmer for about 15-20 minutes.
  7. Remove from heat and stir in lemon zest, lemon juice, and fresh herbs.
  8. Serve garnished with extra herbs or lemon slices.
