Ingredients

- 2 cups long-grain rice (like basmati or jasmine)
- 4 cups chicken or vegetable broth
- 1 large lemon (zested and juiced)
- 1/4 cup olive oil
- 1 medium onion (diced)
- 2–3 cloves garlic (minced)
- Fresh herbs (like parsley or dill, to sprinkle on top)
- Salt and pepper (to taste)
- Optional: Vegetables (like peas, bell peppers, or spinach)
- Optional: Lemon slices for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- Heat olive oil in a pot over medium heat and sauté the diced onion until translucent.
- Add minced garlic and cook for another minute.
- Stir in the rinsed rice and cook for a couple of minutes.
- Pour in the broth and bring to a boil, then add salt and pepper to taste.
- Reduce heat to low, cover pot, and let simmer for about 15-20 minutes.
- Remove from heat and stir in lemon zest, lemon juice, and fresh herbs.
- Serve garnished with extra herbs or lemon slices.
