- 8 oz pasta of your choice
- 4 oz goat cheese (the creamier, the better)
- 2 cups fresh spinach (or kale)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- Grated Parmesan for garnish (optional)
Instructions
- Cook the pasta: Start by boiling water and cooking your pasta according to package instructions. Save about 1/2 cup of pasta water for later.
- Sauté the garlic: While your pasta cooks, heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the spinach: Toss in your spinach and a sprinkle of salt and pepper. Sauté for about 2-3 minutes until it wilts.
- Combine everything: When the pasta is al dente, drain it (remember that reserved cooking water!). Add the hot pasta to the pan along with the goat cheese and red pepper flakes. Mix it all up, adding a splash of reserved water if it feels too dry.
- Taste and adjust: Give it a taste and add more salt, pepper, or goat cheese if needed.
- Serve: Serve hot with a sprinkle of Parmesan on top.
