Ingredients

  • 3/4 cup packed brown sugar
  • 1 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheet with parchment paper.
  3. In a mixing bowl, combine flour, baking soda, ginger, cinnamon, cloves, and whisk until well combined.
  4. Cream the butter and brown sugar in another bowl until light and fluffy.
  5. Add molasses, egg, and vanilla to the butter mixture. Mix well until smooth.
  6. Gradually add the dry ingredients to the wet mixture, combining into a soft dough.
  7. Chill the dough for about 30 minutes.
  8. On a floured surface, roll out the dough to about 1/4 inch thick.
  9. Use cookie cutters to create fun shapes and place them on the prepared baking sheet.
  10. Bake for about 8-10 minutes, until firm around the edges and soft in the center.
  11. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  12. Decorate with royal icing or powdered sugar glaze.
