Description

Delicious cookies that combine the rich flavors of gingerbread with a creamy cheesecake filling, perfect for holiday celebrations.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tbsp molasses
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, beat the softened butter, brown sugar, and granulated sugar until fluffy. Add the egg, molasses, and vanilla, and mix until combined.
  4. Gradually add the dry ingredients into the wet mixture until fully combined.
  5. Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla extract in a separate bowl until smooth.
  6. Form cookie dough balls, create a well in the center, fill it with cheesecake filling, and cover it with more dough.
  7. Place filled cookies on the baking sheets and bake for 10-12 minutes until set but soft in the center.
  8. Cool cookies on the baking sheets for a few minutes before transferring them to a wire rack.

Notes

For an extra festive touch, dust the cookies with powdered sugar before serving.
