- 1 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tbsp molasses
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
- In another bowl, beat the softened butter, brown sugar, and granulated sugar until fluffy. Add the egg, molasses, and vanilla, and mix until combined.
- Gradually add the dry ingredients into the wet mixture until fully combined.
- Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla extract in a separate bowl until smooth.
- Form cookie dough balls, create a well in the center, fill it with cheesecake filling, and cover it with more dough.
- Place filled cookies on the baking sheets and bake for 10-12 minutes until set but soft in the center.
- Cool cookies on the baking sheets for a few minutes before transferring them to a wire rack.
Notes
For an extra festive touch, dust the cookies with powdered sugar before serving.
