Instructions
- Preheat the oven to 425°F (220°C).
- Wash and chop your veggies into roughly equal-sized pieces.
- Toss the veggies with garlic, olive oil, salt, pepper, and herbs in a large bowl.

- Pop them in the oven for about 25-30 minutes, tossing halfway through.
