Description

A quick and nutritious meal prep featuring juicy garlic butter chicken paired with steamed broccoli, perfect for a week’s worth of lunches.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 2–4 tablespoons butter
  • 4–5 cloves fresh garlic, minced
  • Salt & pepper, to taste
  • Fresh parsley, for garnish
  • 2 heads broccoli
  • 1 tablespoon olive oil (optional)
  • Lemon juice (to taste)

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a large skillet, melt butter over medium-high heat. Add minced garlic and sauté until golden brown, about 1 minute.
  3. Add chicken, season with salt and pepper, and cook for 10–12 minutes, stirring occasionally until cooked through.
  4. Cut broccoli into florets.
  5. In a steaming basket over boiling water, steam broccoli florets for 4–5 minutes until vibrant green.
  6. If using, toss steamed broccoli with olive oil and lemon juice.
  7. Assemble meal prep containers with chicken as the base and broccoli on the side.
  8. Garnish with fresh parsley if desired, seal containers, and store in the fridge.

Notes

Meals should last for 4-5 days in the fridge. Reheat in the microwave before serving, adding more butter or seasoning if desired.
