Description

A quick and easy creamy pasta dish with fresh tomatoes and garlic, perfect for weeknight dinners or special occasions.


Ingredients

  • Spaghetti or fettuccine
  • 45 medium-sized fresh tomatoes
  • 45 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Boil a large pot of salted water.
  2. Add your pasta and cook according to the package instructions until al dente.
  3. Reserve a cup of pasta water and then strain the rest. Set the pasta aside.
  1. Heat the olive oil in a large skillet over medium heat.
  2. Toss in the minced garlic and sautรฉ until golden and aromatic.
  3. Add chopped fresh tomatoes and cook until they break down into a sauce, about 5-7 minutes.
  1. Pour in the cream and let it simmer for a minute.
  2. Throw in your cooked pasta and the reserved pasta water.
  3. Add the grated Parmesan cheese and stir until everything is coated and creamy.
  4. Taste and adjust with salt and pepper as needed.
  1. Toss in chopped fresh basil before serving.

Notes

Use fresh ingredients for the best flavor. Feel free to add red pepper flakes for a spicy kick.
