Description

A delightful summer dessert featuring tender biscuit-like cake topped with fresh strawberries and whipped cream.


Ingredients

  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract for cream
  • 1 cup fresh strawberries, sliced
  • Ingredients for strawberry syrup: 1 cup strawberries, ½ cup sugar, and 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the flour, baking powder, baking soda, salt, and sugar in a bowl.
  3. Cut in the butter until it resembles coarse crumbs.
  4. Combine the buttermilk and vanilla in another bowl and then pour it into the dry ingredients and stir until just combined.
  5. Shape the batter into a greased baking dish or scoop onto a parchment-lined baking sheet for drop biscuits.
  6. Bake for 15-20 minutes until golden brown.
  7. Chill a bowl beforehand for whipping cream.
  8. Combine the cream, powdered sugar, and vanilla in the chilled bowl.
  9. Mix on medium-high speed until soft peaks form.
  10. Assemble your dessert by slicing the cake and layering with strawberries and whipped cream.

Notes

For added flavor, consider making homemade strawberry syrup to drizzle over the whipped cream.
