- 1 bottle (750ml) red wine
- 3 cups beef broth
- 4 carrots, sliced

- 1 teaspoon dried thyme
- Fresh parsley for garnish
- Olive oil, salt, and pepper to taste
Instructions
- Prep the ingredients: Chop your veggies and beef ahead of time for a smoother cooking process.
- Cook the bacon: In a heavy pot, cook the bacon until crispy. Remove and set aside, keeping the fat in the pot.
- Sear the beef: Add the beef in batches, ensuring a beautiful brown exterior without crowding.

- Add wine and broth: Pour in the wine and scrape up brown bits from the bottom. Then add the beef broth, bay leaves, and thyme.

- Final touches: Once tender, season with salt and pepper, and stir in the reserved crispy bacon.
