A vibrant and delicious pasta salad that’s perfect for holiday gatherings, loaded with festive ingredients and a tangy dressing.
Ingredients
- Pasta: 2 cups (farfalle or rotini recommended)
- Cherry Tomatoes: 1 cup, halved
- Bell Peppers: 1 cup, diced (red and green)
- Cucumber: 1 cup, diced
- Red Onion: ½ cup, finely chopped
- Feta Cheese: 1 cup, crumbled
- Olives: ½ cup, sliced (kalamata or green)
- Olive Oil: 1/3 cup
- Red Wine Vinegar: 1/4 cup
- Dijon Mustard: 1 tbsp
- Honey: 1 tbsp
- Garlic: 1 clove, minced
- Salt & Pepper: To taste
- Fresh Herbs: Basil or parsley (optional)
Instructions
- Cook the pasta according to package instructions in a pot of boiling salted water until al dente. Drain and rinse under cold water.
- While pasta cooks, chop the vegetables and herbs.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until smooth.
- In a large mixing bowl, combine the cooled pasta with the veggies, olives, feta, and dressing.
- Chill in the fridge for at least 1 hour before serving.
- Stir before serving and garnish with extra feta or fresh herbs.
Notes
Customize with proteins, nuts, or different cheeses to suit your taste. Letting it chill enhances the flavors.
