Description

A vibrant and delicious pasta salad that’s perfect for holiday gatherings, loaded with festive ingredients and a tangy dressing.


Ingredients

  • Pasta: 2 cups (farfalle or rotini recommended)
  • Cherry Tomatoes: 1 cup, halved
  • Bell Peppers: 1 cup, diced (red and green)
  • Cucumber: 1 cup, diced
  • Red Onion: ½ cup, finely chopped
  • Feta Cheese: 1 cup, crumbled
  • Olives: ½ cup, sliced (kalamata or green)
  • Olive Oil: 1/3 cup
  • Red Wine Vinegar: 1/4 cup
  • Dijon Mustard: 1 tbsp
  • Honey: 1 tbsp
  • Garlic: 1 clove, minced
  • Salt & Pepper: To taste
  • Fresh Herbs: Basil or parsley (optional)

Instructions

  1. Cook the pasta according to package instructions in a pot of boiling salted water until al dente. Drain and rinse under cold water.
  2. While pasta cooks, chop the vegetables and herbs.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until smooth.
  4. In a large mixing bowl, combine the cooled pasta with the veggies, olives, feta, and dressing.
  5. Chill in the fridge for at least 1 hour before serving.
  6. Stir before serving and garnish with extra feta or fresh herbs.

Notes

Customize with proteins, nuts, or different cheeses to suit your taste. Letting it chill enhances the flavors.
