Description

Delightful and moist pumpkin bars filled with autumn spices, perfect for fall snacking.


Ingredients

  • 1 cup canned pumpkin (not pumpkin pie filling)
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil (or melted butter)
  • 3 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • Optional: Chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the pumpkin, sugars, and oil until smooth and creamy.
  3. Add in the eggs one at a time, mixing until fully combined.
  4. In another bowl, sift together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. If adding nuts or chocolate chips, fold them in gently.
  7. Grease or line a 9×13 inch pan and pour the batter in, spreading evenly.
  8. Bake for about 25-30 minutes, or until a toothpick comes out clean.
  9. Let cool completely in the pan before cutting into bars.

Notes

For added flavor, drizzle with cream cheese frosting or dust with powdered sugar. Store in an airtight container in the fridge for up to a week.
