Description

A vibrant and nutritious edamame salad topped with a zesty cilantro lime dressing.


Ingredients

Scale
  • 1 cup cooked edamame (shelled)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup corn (fresh or frozen)
  • 1 avocado, diced
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • Juice from 2 limes
  • 1/4 cup fresh cilantro leaves, chopped
  • 12 cloves of garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the lime juice, olive oil, chopped cilantro, and garlic.
  2. Whisk it up until it’s well blended.
  3. Season with salt and pepper to taste.
  4. In a large bowl, combine the edamame, cherry tomatoes, cucumber, red onion, corn, and avocado.
  5. Drizzle in that cilantro lime dressing.
  6. Toss gently until everything is coated.
  7. If you’re feeling fancy, top it off with feta cheese.
