A vibrant and nutritious edamame salad topped with a zesty cilantro lime dressing.
Ingredients

- 1 cup cooked edamame (shelled)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup corn (fresh or frozen)
- 1 avocado, diced
- 1/4 cup feta cheese (optional)
- 1/4 cup olive oil
- Juice from 2 limes
- 1/4 cup fresh cilantro leaves, chopped
- 1–2 cloves of garlic, minced
- Salt and pepper to taste
Instructions
- In a bowl, combine the lime juice, olive oil, chopped cilantro, and garlic.
- Whisk it up until it’s well blended.
- Season with salt and pepper to taste.
- In a large bowl, combine the edamame, cherry tomatoes, cucumber, red onion, corn, and avocado.
- Drizzle in that cilantro lime dressing.
- Toss gently until everything is coated.
- If you’re feeling fancy, top it off with feta cheese.
