Ingredients

- 4 cups Chicken or Vegetable Broth
- 1 can Diced Tomatoes
- 1 Onion, chopped
- 2–3 cloves Garlic, minced
- 2 cups Tortilla Chips
- 1–2 tsp Mexican Spices (cumin, chili powder)
- 1 cup of Protein (chicken, beef, or beans)
- Toppings: Avocado, cilantro, cheese, lime wedges
Instructions
- Sauté onions and garlic in olive oil over medium heat for 3-4 minutes.
- Add broth and diced tomatoes, stir and bring to a simmer.
- Add spices and let simmer for 10 minutes.
- If using chicken, add it to cook through; if using beans, stir them in.
- Add crushed tortilla chips just before serving.
- Ladle into bowls and add your choice of toppings.
