Description

A cozy, comforting tortilla soup that warms your soul, filled with flavors and customizable toppings.


Ingredients

Scale
  • 4 cups Chicken or Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 Onion, chopped
  • 23 cloves Garlic, minced
  • 2 cups Tortilla Chips
  • 12 tsp Mexican Spices (cumin, chili powder)
  • 1 cup of Protein (chicken, beef, or beans)
  • Toppings: Avocado, cilantro, cheese, lime wedges

Instructions

  1. Sauté onions and garlic in olive oil over medium heat for 3-4 minutes.
  2. Add broth and diced tomatoes, stir and bring to a simmer.
  3. Add spices and let simmer for 10 minutes.
  4. If using chicken, add it to cook through; if using beans, stir them in.
  5. Add crushed tortilla chips just before serving.
  6. Ladle into bowls and add your choice of toppings.
