- 1 lb ground beef (or turkey)
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes (with green chilies)
- 1 packet taco seasoning
- 4 cups beef broth
- 1 onion, finely diced
- 1 bell pepper, chopped
- Salt and pepper to taste
- Shredded cheese for topping
- Sour cream for topping
- Chopped cilantro for topping
- Avocado for topping
Instructions
- In a large pot, heat a bit of oil over medium heat. Add the ground beef (or turkey) and cook until brown and crumbly.
- Add the diced onion and bell pepper to the pot. Cook for about 5 minutes until soft and fragrant.
- Add the black beans, corn, diced tomatoes, taco seasoning, and beef broth to the pot. Mix well and bring to a gentle boil. Reduce heat to low and let simmer for about 20 minutes.
- Taste the soup and adjust with salt and pepper if needed.
- Ladle the soup into bowls and top with shredded cheese, sour cream, cilantro, and avocado as desired.
Notes
This soup tastes even better the next day. For a meatless option, swap meat for tofu or double the beans.
