Description

A delicious and hearty taco soup that combines all the comforting flavors of tacos in a warm bowl, perfect for any occasion.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes (with green chilies)
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 onion, finely diced
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Shredded cheese for topping
  • Sour cream for topping
  • Chopped cilantro for topping
  • Avocado for topping

Instructions

  1. In a large pot, heat a bit of oil over medium heat. Add the ground beef (or turkey) and cook until brown and crumbly.
  2. Add the diced onion and bell pepper to the pot. Cook for about 5 minutes until soft and fragrant.
  3. Add the black beans, corn, diced tomatoes, taco seasoning, and beef broth to the pot. Mix well and bring to a gentle boil. Reduce heat to low and let simmer for about 20 minutes.
  4. Taste the soup and adjust with salt and pepper if needed.
  5. Ladle the soup into bowls and top with shredded cheese, sour cream, cilantro, and avocado as desired.

Notes

This soup tastes even better the next day. For a meatless option, swap meat for tofu or double the beans.
