Description

A delightful fusion of macaroni and cheese with taco flavors, perfect for a quick and satisfying meal.


Ingredients

  • 8 oz elbow macaroni
  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 3 cups shredded cheese (cheddar recommended)
  • 1 can diced tomatoes with green chilies
  • 1 cup milk
  • Salt & pepper to taste
  • Optional toppings: sour cream, diced tomatoes, jalapeños, avocado

Instructions

  1. Boil a pot of water and add a pinch of salt. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  2. Brown the ground beef in a large skillet over medium heat, drain excess grease, then mix in the taco seasoning and a bit of water.
  3. Add the canned tomatoes to the skillet and stir. Pour in the milk and combine.
  4. Toss in the cooked macaroni and mix until coated.
  5. Add the shredded cheese and stir until melted. Serve with your favorite toppings.
