- 4–6 boneless, skinless chicken breasts or thighs
- 1 cup pineapple chunks (canned or fresh)
- 1 cup bell peppers, sliced (red, yellow, or green)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced (optional)
- Cooked rice or quinoa for serving
- Chopped green onions and sesame seeds for topping
Instructions
- Pat the chicken dry and place it in the crockpot.
- In a bowl, mix soy sauce, brown sugar, garlic, and ginger until the sugar dissolves and pour over the chicken.
- Add pineapple and bell peppers to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the crockpot and stir everything to combine.
- Serve over rice or quinoa, garnished with green onions and sesame seeds.
