Description

A quick and delicious crockpot recipe featuring tender chicken cooked in a sweet and tangy sauce with pineapple and bell peppers.


Ingredients

  • 46 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks (canned or fresh)
  • 1 cup bell peppers, sliced (red, yellow, or green)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced (optional)
  • Cooked rice or quinoa for serving
  • Chopped green onions and sesame seeds for topping

Instructions

  1. Pat the chicken dry and place it in the crockpot.
  2. In a bowl, mix soy sauce, brown sugar, garlic, and ginger until the sugar dissolves and pour over the chicken.
  3. Add pineapple and bell peppers to the crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, shred the chicken in the crockpot and stir everything to combine.
  6. Serve over rice or quinoa, garnished with green onions and sesame seeds.
