- 1 pkg ready-made pie crust
- 1 cup chopped pecans
- 1 cup brown sugar
- ½ cup corn syrup
- 3 large eggs
- ¼ cup melted butter
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Spray your muffin tin with cooking spray.
- Roll out the pie crust and cut it into circles about 4 inches in diameter.
- Press each crust circle into the muffin tin.
- In a bowl, mix together brown sugar, corn syrup, eggs, melted butter, vanilla extract, and salt until smooth.
- Add chopped pecans to the mixture and stir evenly.
- Spoon the filling into each crust, filling them about ¾ full.
- Bake for 20-25 minutes until golden brown.
- Let the pies cool in the tin for 10 minutes before transferring to a wire rack.
- Serve once cooled, optionally topped with vanilla ice cream.
Notes
Allow the mini pecan pies to cool completely to help the filling set. Consider variations like adding chocolate chips or spices.
