Description

A warm and cozy lentil potato soup, perfect for comfort and nutrition.


Ingredients

Scale
  • 1 cup lentils (green or brown)
  • 2 medium potatoes (peeled and diced)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 3 carrots (sliced)
  • 4 cups vegetable broth (or chicken broth for the non-vegetarians)
  • 1 teaspoon cumin (optional)
  • Salt and pepper (to taste)
  • A sprinkle of olive oil
  • Optional toppings: Fresh parsley, lemon juice, or cream

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté onion and garlic until golden and fragrant.
  2. Add sliced carrots and diced potatoes, stirring for a few minutes.
  3. Incorporate lentils and broth along with cumin, salt, and pepper to taste.
  4. Bring to a boil, then reduce heat and let it simmer for 30-35 minutes until lentils are tender.
  5. Blend to desired smoothness with an immersion blender if preferred.
  6. Taste and adjust seasoning as necessary.

Notes
