Ingredients

- 2 medium potatoes (peeled and diced)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 3 carrots (sliced)
- 4 cups vegetable broth (or chicken broth for the non-vegetarians)
- 1 teaspoon cumin (optional)
- Salt and pepper (to taste)
- A sprinkle of olive oil
- Optional toppings: Fresh parsley, lemon juice, or cream
Instructions
- Heat olive oil in a large pot over medium heat and sauté onion and garlic until golden and fragrant.
- Add sliced carrots and diced potatoes, stirring for a few minutes.
- Incorporate lentils and broth along with cumin, salt, and pepper to taste.
- Bring to a boil, then reduce heat and let it simmer for 30-35 minutes until lentils are tender.
- Blend to desired smoothness with an immersion blender if preferred.
- Taste and adjust seasoning as necessary.
