Ingredients

  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs
  • ½ cup (120ml) buttermilk
  • 2 tablespoons lemon zest
  • ¼ cup (60ml) fresh lemon juice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing it or lining it with parchment paper.
  3. Mix the dry ingredients in a bowl: flour, baking powder, baking soda, and salt.
  4. Cream the softened butter and sugar together in a larger bowl until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the lemon zest and lemon juice.
  6. Combine the dry ingredients into the wet mixture, alternating with the buttermilk.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean. Let it cool for 10 minutes before transferring to a wire rack.

Notes

For added flavor, consider glazing with powdered sugar and lemon juice or adding poppy seeds or blueberries.
