- 1 cup (200g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- ½ cup (120ml) buttermilk
- 2 tablespoons lemon zest
- ¼ cup (60ml) fresh lemon juice
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your loaf pan by greasing it or lining it with parchment paper.
- Mix the dry ingredients in a bowl: flour, baking powder, baking soda, and salt.
- Cream the softened butter and sugar together in a larger bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the lemon zest and lemon juice.
- Combine the dry ingredients into the wet mixture, alternating with the buttermilk.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean. Let it cool for 10 minutes before transferring to a wire rack.
Notes
For added flavor, consider glazing with powdered sugar and lemon juice or adding poppy seeds or blueberries.
