Ingredients

- 1 lb ground beef or turkey
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans diced tomatoes
- 4 cups chicken or vegetable broth
- 8 lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- 1 cup ricotta cheese (optional)
- 2 cups shredded mozzarella cheese
- Salt and pepper, to taste
- Spinach or kale (optional)
- Crushed red pepper (optional)
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Brown the ground meat, then add in the onion and garlic until fragrant.
- Pour in the diced tomatoes and broth; stir well.
- Add the broken lasagna noodles and let everything simmer for 10-12 minutes until noodles are tender.
- Season with Italian seasoning, salt, and pepper to taste.
- Before serving, stir in ricotta and mozzarella cheese.
Notes
If preparing in advance, store noodles separately to prevent them from becoming mushy. Great for meal prep and leftovers.
