Description

A heartwarming version of lasagna in soup form, combining cheesy, saucy flavors for a quick and satisfying meal.


Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans diced tomatoes
  • 4 cups chicken or vegetable broth
  • 8 lasagna noodles, broken into pieces
  • 1 tsp Italian seasoning
  • 1 cup ricotta cheese (optional)
  • 2 cups shredded mozzarella cheese
  • Salt and pepper, to taste
  • Spinach or kale (optional)
  • Crushed red pepper (optional)

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Brown the ground meat, then add in the onion and garlic until fragrant.
  2. Pour in the diced tomatoes and broth; stir well.
  3. Add the broken lasagna noodles and let everything simmer for 10-12 minutes until noodles are tender.
  4. Season with Italian seasoning, salt, and pepper to taste.
  5. Before serving, stir in ricotta and mozzarella cheese.

Notes

If preparing in advance, store noodles separately to prevent them from becoming mushy. Great for meal prep and leftovers.
