Ingredients
- Rotini, fusilli, or penne pasta
- Cherry tomatoes
- Bell peppers
- Cucumber
- Red onion
- Mozzarella balls or Parmesan cheese
- Diced salami, pepperoni, or chickpeas (optional)
- Italian dressing
- Fresh basil or parsley
Instructions
- Cook the pasta in salted boiling water until al dente, then drain and rinse with cold water.
- Chop the vegetables into bite-sized pieces.
- In a large bowl, combine the cooled pasta, chopped veggies, cheese, and any optional protein.
- Pour Italian dressing over the mixture, starting with about half a cup, and toss to combine.
- Mix in the fresh herbs, reserving some for garnish.
- Refrigerate for at least 30 minutes before serving.
