Description

A comforting and customizable taco soup made effortlessly in a crockpot, perfect for busy weeks.


Ingredients

Scale
  • 1 pound ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • Optional toppings: sour cream, shredded cheese, avocado, cilantro, tortilla chips

Instructions

  1. Brown the meat in a skillet over medium heat for 5–7 minutes, then drain excess fat.
  2. Combine all ingredients in the crockpot: ground meat, black beans, corn, diced tomatoes, diced bell pepper and onion, taco seasoning, and beef broth. Stir well.
  3. Cook on low for 6–8 hours or high for 3–4 hours.
  4. Top with optional toppings before serving.

Notes

Store leftovers in an airtight container for up to a week. Freeze portions for a quick meal later.
