A comforting and customizable taco soup made effortlessly in a crockpot, perfect for busy weeks.
Ingredients

- 1 pound ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups beef broth
- 1 bell pepper, diced
- 1 onion, diced
- Optional toppings: sour cream, shredded cheese, avocado, cilantro, tortilla chips
Instructions
- Brown the meat in a skillet over medium heat for 5–7 minutes, then drain excess fat.
- Combine all ingredients in the crockpot: ground meat, black beans, corn, diced tomatoes, diced bell pepper and onion, taco seasoning, and beef broth. Stir well.
- Cook on low for 6–8 hours or high for 3–4 hours.
- Top with optional toppings before serving.
Notes
Store leftovers in an airtight container for up to a week. Freeze portions for a quick meal later.
