Description

A quick and customizable creamy pasta salad perfect for summer picnics and potlucks.


Ingredients

  • 12 oz pasta (any type, e.g., rotini or penne)
  • 1 cup mayo
  • 1 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1 cup bell pepper (diced)
  • ½ cup red onion (chopped finely)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup olives (optional)

Instructions

  1. Boil a large pot of salted water. Add pasta and cook until al dente for about 8-10 minutes. Drain and rinse under cold water.
  2. In a large mixing bowl, combine mayo, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, and a pinch of salt and pepper. Whisk together.
  3. Toss cooled pasta into the dressing. Add cherry tomatoes, cucumber, bell pepper, red onion, shredded cheese, and olives if using.
  4. Cover and refrigerate for at least 1 hour to let flavors meld.
  5. Taste before serving and adjust seasoning if necessary.
