A quick and customizable creamy pasta salad perfect for summer picnics and potlucks.
Ingredients

- 12 oz pasta (any type, e.g., rotini or penne)
- 1 cup mayo
- 1 cup Greek yogurt
- 1 tablespoon Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 1 cup bell pepper (diced)
- ½ cup red onion (chopped finely)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup olives (optional)
Instructions
- Boil a large pot of salted water. Add pasta and cook until al dente for about 8-10 minutes. Drain and rinse under cold water.
- In a large mixing bowl, combine mayo, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, and a pinch of salt and pepper. Whisk together.
- Toss cooled pasta into the dressing. Add cherry tomatoes, cucumber, bell pepper, red onion, shredded cheese, and olives if using.
- Cover and refrigerate for at least 1 hour to let flavors meld.
- Taste before serving and adjust seasoning if necessary.
Notes
Can be customized with various proteins or vegetables and lasts in the fridge for 3-5 days.
