Description

A comforting and creamy twist on traditional lasagna, this Easy Creamy Lasagna Soup is perfect for chilly nights or lazy days.


Ingredients

  • 1 lb ground beef or Italian sausage (or omit for a veggie option)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 4 cups chicken or vegetable broth
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups spinach
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add ground meat and diced onion; sauté until browned and onion is translucent.
  3. Add minced garlic and sauté for another minute.
  4. Stir in diced tomatoes, broth, Italian seasoning, salt, and pepper; bring to a gentle simmer.
  5. Add the broken lasagna noodles and bring to a boil; then reduce heat to a simmer for 10-12 minutes.
  6. Once noodles are al dente, stir in the ricotta cheese and spinach until wilted.
  7. Stir in mozzarella and Parmesan until melted and creamy.

Notes

Top with fresh basil or parsley and serve with crusty bread for dipping.
