A comforting and creamy twist on traditional lasagna, this Easy Creamy Lasagna Soup is perfect for chilly nights or lazy days.
Ingredients

- 1 lb ground beef or Italian sausage (or omit for a veggie option)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 4 cups chicken or vegetable broth
- 1 tsp Italian seasoning
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups spinach
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add ground meat and diced onion; sauté until browned and onion is translucent.
- Add minced garlic and sauté for another minute.
- Stir in diced tomatoes, broth, Italian seasoning, salt, and pepper; bring to a gentle simmer.
- Add the broken lasagna noodles and bring to a boil; then reduce heat to a simmer for 10-12 minutes.
- Once noodles are al dente, stir in the ricotta cheese and spinach until wilted.
- Stir in mozzarella and Parmesan until melted and creamy.
Notes
Top with fresh basil or parsley and serve with crusty bread for dipping.
