A simple and delicious dump-and-bake chicken dish paired with refreshing tzatziki rice.

- 4 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 2 tablespoons lemon juice
- Fresh dill, to taste
- Feta cheese (optional)
- Extra dill or parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine Greek yogurt, minced garlic, olive oil, oregano, salt, and pepper. Whisk until creamy.
- Lay chicken breasts flat in a baking dish and smother them with the yogurt mixture.
- Add rice and chicken broth into the same dish and give it a stir. Place chicken on top.
- Cover with foil and bake for 45-50 minutes.
- Mix diced cucumber, cherry tomatoes, lemon juice, and fresh dill in a bowl for the tzatziki rice.
- Remove chicken from the oven and stir in the vegetable mix with the rice.
- Serve chicken alongside tzatziki rice and top with feta and fresh herbs if desired.
Notes
Keep an eye on the chicken to avoid overcooking. Use a meat thermometer to ensure it reaches 165°F (75°C).
