- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 teaspoon dried dill
- 1/2 cup flour
- 2 large eggs
- Butter or olive oil (for sautéing)
Instructions
- Marinate the chicken by placing it in a sealable bag with dill pickle juice for at least 30 minutes.
- In a shallow bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, black pepper, and dill.
- Beat the eggs in another bowl and place flour in a third bowl.
- Heat a non-stick skillet over medium heat and add butter or olive oil.
- Dredge marinated chicken in flour, dip in eggs, and then coat with the breadcrumb mixture.
- Cook the coated chicken in the skillet for 6-8 minutes on each side until golden brown and cooked through.
- Plate alongside roasted veggies or salad and sprinkle with fresh dill if desired.
