Description

A crispy, tangy chicken dish infused with the bold flavors of dill pickles and Parmesan cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup breadcrumbs (preferably panko)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried dill
  • 1/2 cup flour
  • 2 large eggs
  • Butter or olive oil (for sautéing)

Instructions

  1. Marinate the chicken by placing it in a sealable bag with dill pickle juice for at least 30 minutes.
  2. In a shallow bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, black pepper, and dill.
  3. Beat the eggs in another bowl and place flour in a third bowl.
  4. Heat a non-stick skillet over medium heat and add butter or olive oil.
  5. Dredge marinated chicken in flour, dip in eggs, and then coat with the breadcrumb mixture.
  6. Cook the coated chicken in the skillet for 6-8 minutes on each side until golden brown and cooked through.
  7. Plate alongside roasted veggies or salad and sprinkle with fresh dill if desired.
