Description

A hearty and comforting slow cooker Korean chicken stew that’s easy to prepare and packed with flavor.


Ingredients

Scale
  • 1.5 lbs Boneless chicken thighs or breasts, cut into bite-sized pieces
  • 2 Carrots, diced
  • 1 Onion, diced
  • 1 cup Mushrooms, sliced
  • 1/4 cup Soy sauce
  • 4 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 2 tbsp Gochujang (Korean chili paste)
  • 4 cups Chicken broth
  • 2 tbsp Sesame oil

Instructions

  1. Layer the chicken in the slow cooker, followed by the vegetables.
  2. In a bowl, mix soy sauce, garlic, ginger, and gochujang together.
  3. Pour the mixture over the ingredients in the slow cooker.
  4. Add chicken broth and sesame oil, stirring gently to combine.
  5. Set the slow cooker to low and cook for 6-8 hours, or high for 3-4 hours.
  6. Taste and adjust seasoning as needed 30 minutes before serving.
  7. Serve with rice or noodles and garnish with chopped green onions and sesame seeds.

Notes

Use pre-chopped veggies for added convenience. This stew can be made vegetarian by swapping chicken for tofu and using veggie broth.
