Description
A hearty and comforting slow cooker Korean chicken stew that’s easy to prepare and packed with flavor.
Ingredients

- 1.5 lbs Boneless chicken thighs or breasts, cut into bite-sized pieces
- 2 Carrots, diced
- 1 Onion, diced
- 1 cup Mushrooms, sliced
- 1/4 cup Soy sauce
- 4 cloves Garlic, minced
- 1 inch Ginger, minced
- 2 tbsp Gochujang (Korean chili paste)
- 4 cups Chicken broth
- 2 tbsp Sesame oil
Instructions
- Layer the chicken in the slow cooker, followed by the vegetables.
- In a bowl, mix soy sauce, garlic, ginger, and gochujang together.
- Pour the mixture over the ingredients in the slow cooker.
- Add chicken broth and sesame oil, stirring gently to combine.
- Set the slow cooker to low and cook for 6-8 hours, or high for 3-4 hours.
- Taste and adjust seasoning as needed 30 minutes before serving.
- Serve with rice or noodles and garnish with chopped green onions and sesame seeds.
Notes
Use pre-chopped veggies for added convenience. This stew can be made vegetarian by swapping chicken for tofu and using veggie broth.
