- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 3 carrots, sliced
- 1 large potato, diced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 1 cup beef broth
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons ginger, grated
- 1 cup fresh pineapple chunks
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Season the beef cubes with salt and pepper, then brown them on all sides.
- Add the chopped onions and garlic, and sauté until soft and fragrant.
- Add carrots and potatoes, stirring them in to absorb the flavors.
- Pour in the beef broth, diced tomatoes, coconut milk, soy sauce, brown sugar, and grated ginger. Mix well.
- Let the mixture simmer on low heat for about 90 to 120 minutes.
- Add pineapple chunks during the last 15 minutes of cooking.
- Serve the stew in bowls, garnished with green onions.
