Description

A flavorful Hawaiian-style beef stew inspired by island cuisine, featuring tender beef, vibrant vegetables, and a tropical twist with pineapple.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 3 carrots, sliced
  • 1 large potato, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons ginger, grated
  • 1 cup fresh pineapple chunks
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the beef cubes with salt and pepper, then brown them on all sides.
  2. Add the chopped onions and garlic, and sauté until soft and fragrant.
  3. Add carrots and potatoes, stirring them in to absorb the flavors.
  4. Pour in the beef broth, diced tomatoes, coconut milk, soy sauce, brown sugar, and grated ginger. Mix well.
  5. Let the mixture simmer on low heat for about 90 to 120 minutes.
  6. Add pineapple chunks during the last 15 minutes of cooking.
  7. Serve the stew in bowls, garnished with green onions.

Serve with rice or crusty bread for a fully satisfying meal.
