Description

A creamy and flavorful white chicken chili made effortlessly in a crockpot.


Ingredients

  • 23 boneless, skinless chicken breasts
  • 2 cans of great northern or cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 4 cups of chicken broth
  • 8 oz block of cream cheese
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro, avocado

Instructions

  1. Toss the chicken breasts into the crockpot.
  2. Add the chopped onion, minced garlic, and diced green chiles.
  3. Drizzle chicken broth over everything and add spices.
  4. Put the lid on and cook on low for 6-8 hours or high for 4 hours.
  5. Shred the chicken and mix everything together.
  6. Add the cream cheese and stir until melted and creamy.

Feel free to add more vegetables or experiment with spices to customize your chili.
