A creamy and flavorful white chicken chili made effortlessly in a crockpot.
Ingredients

- 2–3 boneless, skinless chicken breasts
- 2 cans of great northern or cannellini beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 4 cups of chicken broth
- 8 oz block of cream cheese
- 1 medium onion, chopped
- 2–3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 tablespoon cumin
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, cilantro, avocado
Instructions
- Toss the chicken breasts into the crockpot.
- Add the chopped onion, minced garlic, and diced green chiles.
- Drizzle chicken broth over everything and add spices.
- Put the lid on and cook on low for 6-8 hours or high for 4 hours.
- Shred the chicken and mix everything together.
- Add the cream cheese and stir until melted and creamy.

Feel free to add more vegetables or experiment with spices to customize your chili.
