A comforting blend of pasta and taco flavors, easy to prepare in a crockpot for a delicious, set-it-and-forget-it meal.
Ingredients

- 1 lb Ground Beef (or Turkey)
- 1 package Taco Seasoning
- 16 oz Pasta (elbow or shells)
- 1 can Black Beans (drained)
- 1 can Corn (drained)
- 2 cups Diced Tomatoes
- 1 cup Salsa
- 2 cups Cheese (cheddar or your fave)
- Optional: Bell Peppers, Onions, Olives
Instructions
- In a skillet, brown your ground meat of choice. Drain the fat and toss it into the crockpot.
- Add taco seasoning, black beans, corn, diced tomatoes, salsa, and pasta to the crockpot. Stir to combine.
- Pour in around 2 cups of water (or beef broth).
- Cover the crockpot and set it on low for 4 hours or high for 2 hours.
- About 15 minutes before serving, sprinkle in the cheese and let it melt.
- Scoop into bowls and top with cilantro, sour cream, or desired toppings.
Notes
For a spicy kick, add jalapeños. Store leftovers in an airtight container for up to 3 days.
