Description

A cozy and comforting casserole that simmers to perfection in your crockpot, packed with sausage, vegetables, and topped with melted cheese.


Ingredients

Scale
  • 1 pound of sausage
  • 1 can of diced tomatoes
  • 1 cup of bell peppers
  • 1 cup of onion
  • 2 cups of broccoli florets
  • 3 cups of diced potatoes
  • 1 teaspoon of garlic powder
  • 1 teaspoon of Italian seasoning
  • Salt & pepper to taste
  • 1 cup of shredded cheese

Instructions

  1. Wash and chop all ingredients.
  2. Layer the sausage at the bottom of the crockpot.
  3. Add bell peppers, onions, and broccoli on top of the sausage.
  4. Layer diced potatoes over the veggies.
  5. Sprinkle garlic powder, Italian seasoning, salt, and pepper over the potatoes.
  6. Pour in the diced tomatoes with juices.
  7. Cover and cook on low for 360 minutes or high for 240 minutes.
  8. In the last 15 minutes, sprinkle shredded cheese on top and cover to let it melt.

Notes

For alternative proteins, consider chicken or meatless sausage. For a creamier dish, stir in a can of cream of mushroom soup before cooking.
