A cozy and comforting casserole that simmers to perfection in your crockpot, packed with sausage, vegetables, and topped with melted cheese.
Ingredients

- 1 pound of sausage
- 1 can of diced tomatoes
- 1 cup of bell peppers
- 1 cup of onion
- 2 cups of broccoli florets
- 3 cups of diced potatoes
- 1 teaspoon of garlic powder
- 1 teaspoon of Italian seasoning
- Salt & pepper to taste
- 1 cup of shredded cheese
Instructions
- Wash and chop all ingredients.
- Layer the sausage at the bottom of the crockpot.
- Add bell peppers, onions, and broccoli on top of the sausage.
- Layer diced potatoes over the veggies.
- Sprinkle garlic powder, Italian seasoning, salt, and pepper over the potatoes.
- Pour in the diced tomatoes with juices.
- Cover and cook on low for 360 minutes or high for 240 minutes.
- In the last 15 minutes, sprinkle shredded cheese on top and cover to let it melt.
Notes
For alternative proteins, consider chicken or meatless sausage. For a creamier dish, stir in a can of cream of mushroom soup before cooking.
