Ingredients

1 lb ground beef

1 cup long-grain rice

1 can black beans

1 can corn

1 can diced tomatoes with green chilies

1.5 cups beef broth

1 onion

1 red bell pepper

2 cloves garlic

Chili powder, cumin, smoked paprika

Toppings: cheese, avocado, cilantro, lime


Instructions

1. Brown beef and drain fat.

2. Add all ingredients to Crockpot.

3. Stir well and cover.

4. Cook LOW 4–5 hrs or HIGH 2–3 hrs.

5. Fluff rice and serve with toppings.

Notes
