- 2 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 8 oz cream cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 12 oz uncooked pasta (penne or rotini)
- Fresh parsley for garnish (optional)
Instructions
- Prep your ingredients by chopping, mincing, and measuring everything out.
- In your crockpot, place the chicken breasts at the bottom and season with salt and pepper. Layer the chicken broth, minced garlic, cream cheese, and Italian seasoning on top.
- Give everything a little stir and close the lid.
- Set your crockpot on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before the chicken is ready, cook your pasta according to the package instructions. Drain it without rinsing.
- Once the chicken is cooked through, shred it directly in the crockpot, then add the cooked pasta and Parmesan cheese. Stir until the cheese melts into the sauce.
- Let it cook for another 10 minutes on low to combine flavors.
- Serve with a sprinkle of fresh parsley on top.
Notes
For best quality, store leftovers in an airtight container for 3-4 days in the fridge. Consider freezing without pasta to avoid mushiness.
