Description

A delightful and comforting dish featuring meatballs simmered in a savory French onion broth, perfect for weeknight dinners.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup French onion soup
  • 1/2 cup shredded Gruyère or Swiss cheese
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme (fresh or dried)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined and roll into 1-inch meatballs.
  2. Thinly slice the onions and add them to the bottom of the crockpot.
  3. Gently place the meatballs on top of the sliced onions. In a separate bowl, mix beef broth, French onion soup, Worcestershire sauce, and thyme. Pour over the meatballs and top with shredded cheese.
  4. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.

Notes

Meatballs can be served on sub sandwiches, over rice or pasta, or enjoyed on their own. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
