Juicy meatballs smothered in a rich, savory onion sauce, cooked to perfection in a crockpot.
Ingredients

- 1 pound ground beef
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 large onions, sliced
- 2 cups beef broth
- 2 tablespoons soy sauce
- Thyme and bay leaves
- Shredded Gruyère or Swiss cheese for topping
Instructions
- In a bowl, combine ground beef, breadcrumbs, egg, Parmesan, garlic powder, onion powder, salt, and pepper. Mix until just combined and form into 1-inch meatballs.
- Optionally, sauté sliced onions in olive oil over medium heat until soft and golden.
- Place meatballs in the crockpot, top with sautéed onions (or raw), thyme, bay leaves, soy sauce, and pour in beef broth.
- Cook on low for 6 to 8 hours or high for 3 to 4 hours until meatballs are cooked through.
- Just before serving, sprinkle shredded cheese on top and cover for about 15 minutes until melted.
Notes
Serve on crusty rolls, over spaghetti, or with rice or mashed potatoes.
