- 1 lb chicken breast (boneless, skinless)
- 1 can (15 oz) black beans (rinsed and drained)
- 1 can (15 oz) corn
- 1 can (28 oz) diced tomatoes
- 1 small onion (diced)
- 2–3 cloves garlic (minced)
- 2 cups chicken broth
- 2 tbsp taco seasoning
- Salt and pepper to taste
- Tortilla strips (for topping)
Instructions
- Prep the chicken by cutting it into large cubes and seasoning with salt, pepper, and taco seasoning.
- Place chicken, black beans, corn, diced tomatoes, onion, garlic, chicken broth, and taco seasoning in the crockpot.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Remove the chicken when done, shred it, and return it to the soup.
- Ladle into bowls and top with desired toppings such as cilantro, avocado, sour cream, or lime wedges.
Notes
This soup keeps well for leftovers and can be frozen for later use.
