Effortless and flavorful chicken tacos made in a crockpot with frozen chicken, salsa, and seasonings.
Ingredients

- 2โ3 lbs boneless chicken (breasts or thighs)
- 1 cup salsa (chunky or smooth)
- 1 packet taco seasoning or 2 tbsp homemade taco mix
- 1/2 cup chicken broth (optional)
- 1 onion, sliced
- 2 cloves garlic, minced
- Juice of 1 lime
- Fresh cilantro for finishing
- Tortillas
- Your favorite toppings: shredded cheese, avocado, sour cream, pico de gallo
Instructions
- Place the chicken in the crockpot. Add the onion, garlic, salsa, taco seasoning, and chicken broth if you like it saucy.
- Cook on LOW for 6โ8 hours or HIGH for 3โ4 hours depending on your schedule.
- Remove the chicken and shred it with two forks, then return it to the crockpot to soak up the juices.
- Squeeze lime over the shredded chicken and stir in chopped cilantro. Taste and adjust salt or heat.
- Warm tortillas, pile on the chicken, and add toppings. Serve immediately.
Notes
For a creamy finish, stir in cream cheese or sour cream before serving. Adjust spice levels with jalapeรฑos or chipotle as desired.
