Description

Effortless and flavorful chicken tacos made in a crockpot with frozen chicken, salsa, and seasonings.


Ingredients

  • 2โ€“3 lbs boneless chicken (breasts or thighs)
  • 1 cup salsa (chunky or smooth)
  • 1 packet taco seasoning or 2 tbsp homemade taco mix
  • 1/2 cup chicken broth (optional)
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • Fresh cilantro for finishing
  • Tortillas
  • Your favorite toppings: shredded cheese, avocado, sour cream, pico de gallo

Instructions

  1. Place the chicken in the crockpot. Add the onion, garlic, salsa, taco seasoning, and chicken broth if you like it saucy.
  2. Cook on LOW for 6โ€“8 hours or HIGH for 3โ€“4 hours depending on your schedule.
  3. Remove the chicken and shred it with two forks, then return it to the crockpot to soak up the juices.
  4. Squeeze lime over the shredded chicken and stir in chopped cilantro. Taste and adjust salt or heat.
  5. Warm tortillas, pile on the chicken, and add toppings. Serve immediately.

Notes

For a creamy finish, stir in cream cheese or sour cream before serving. Adjust spice levels with jalapeรฑos or chipotle as desired.
