Description
A creamy, hearty slow cooker stew that tastes just like classic chicken pot pie — but easier!
Ingredients
1 ½ lbs boneless chicken breasts
3 cups chicken broth
2 cups diced potatoes
1 ½ cups frozen peas and carrots
1 cup chopped celery
1 small onion, diced
2 garlic cloves
1 can cream of chicken soup
1 cup heavy cream
1 tsp poultry seasoning
½ tsp thyme
Salt and pepper to taste
1 tbsp butter
2 tbsp flour (optional)
Instructions
1. Add chicken, veggies, broth, soup, and seasonings to crockpot.
2. Cook on low 6–7 hours or high 3–4 hours.
3. Shred chicken and stir in cream and butter.
4. If desired, thicken with flour mixture.
5. Cook 15–20 minutes more, serve hot.
Notes
Serve with biscuits or puff pastry for that perfect pot pie finish.
