- 1 pound of chicken breast (boneless, skinless)
- 2 bell peppers (any color)
- 1 onion (yellow or red)
- 1 packet of taco seasoning
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 8 ounces of pasta (penne or rotini)
- 4 ounces of cream cheese
- Fresh cilantro (for garnish)
- Shredded cheese (optional)
- Sour cream or avocado (optional)
Instructions
- Prep the chicken and veggies by slicing the bell peppers and onion into bite-sized pieces.
- Add the chicken to the bottom of the crockpot, followed by the bell peppers and onion.
- Sprinkle taco seasoning over the mixture, then pour in the diced tomatoes and chicken broth. Stir to combine.
- Let it cook on low for 6-8 hours, or high for 3-4 hours.
- Cook the pasta according to package directions about 30 minutes before serving.
- Mix in the cream cheese once the chicken is tender, shredding it right in the crockpot.
- Combine the cooked pasta with the chicken mixture and stir it all together.
- Serve with cilantro, shredded cheese, sour cream, or avocado on top.
