- 1 pound boneless, skinless chicken breast (or thighs)
- 1 cup long-grain white rice
- 4 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup onion, chopped
- 2 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- 1 teaspoon dried thyme
- 2 bay leaves
- Optional: 1/2 cup heavy cream
- Optional add-ins: frozen peas, corn
Instructions
- Chop the vegetables: carrots, celery, onion, and garlic.
- In the crockpot, layer the chicken, rice, and chopped vegetables.
- Pour in the chicken broth to cover the ingredients and season with salt, pepper, thyme, and bay leaves.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked and rice is tender.
- Remove the chicken, shred it, and stir back into the soup. Add cream if desired.
- Ladle into bowls and serve with fresh bread.
