Ingredients

  • 1 pound boneless, skinless chicken breast (or thighs)
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Optional: 1/2 cup heavy cream
  • Optional add-ins: frozen peas, corn

Instructions

  1. Chop the vegetables: carrots, celery, onion, and garlic.
  2. In the crockpot, layer the chicken, rice, and chopped vegetables.
  3. Pour in the chicken broth to cover the ingredients and season with salt, pepper, thyme, and bay leaves.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked and rice is tender.
  5. Remove the chicken, shred it, and stir back into the soup. Add cream if desired.
  6. Ladle into bowls and serve with fresh bread.
