Easy and flavorful slow-cooked BBQ chicken thighs made with Carolina Gold BBQ sauce, perfect for busy weeknights.

- 2 pounds bone-in, skin-on chicken thighs (or boneless)
- 1 cup Carolina Gold BBQ sauce
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: Red pepper flakes for a little kick
Instructions
- Prep the chicken by patting it dry and seasoning with salt and pepper.
- Sauté the onion and garlic in olive oil over medium heat until soft.
- Layer the sautéed onions and garlic in the crockpot, then add the seasoned chicken thighs on top.
- Drizzle Carolina Gold BBQ sauce over the chicken, coating it generously.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Shred the chicken in the crockpot and mix with sauce before serving.
Notes
For extra flavor, marinate the chicken thighs in BBQ sauce overnight. Try serving with coleslaw, cornbread, pickles, or potato salad.
