Description

A cozy and unique pumpkin chili that combines savory and sweet flavors, perfect for fall nights.


Ingredients

Scale
  • 1 lb ground meat (beef, turkey, or plant-based)
  • 1 can pumpkin puree (no sugar added)
  • 1 can black beans, drained
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 can diced tomatoes
  • Optional: 1 cup corn
  • Optional toppings: cheese, sour cream, avocado, pumpkin seeds

Instructions

  1. Chop your onion and bell pepper; mince the garlic.
  2. In a skillet, brown the ground meat over medium heat.
  3. Toss the browned meat and all the veggies into the crock pot, then add in the pumpkin puree, black beans, and spices.
  4. Pour in the diced tomatoes and optionally add a splash of vegetable broth.
  5. Set your crock pot on low for 6-8 hours or high for 3-4 hours.
  6. Stir occasionally, if desired, to show your chili some love.

Notes

Feel free to customize with jalapeños for heat or more tomatoes if desired. Leftovers can be used for tacos or chili mac.
