Description
Warm and comforting taco soup that’s low in carbs and perfect for meal prepping.
Ingredients

- 1 lb ground beef or turkey
- 1 onion, diced
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken or beef broth
- 1 cup tomato sauce
- 1 can diced tomatoes
- 2 tbsp taco seasoning
- Optional toppings: shredded cheese, avocado, sour cream, jalapeños
Instructions
- In a skillet, cook the ground beef or turkey until browned. Drain excess grease.
- Toss the chopped onion and bell peppers in with the meat and cook for about 5 minutes until soft.
- Add the meat mixture to the Crock Pot.
- Pour in the tomato sauce, diced tomatoes, and broth. Stir in the taco seasoning.
- Cover and cook on low for 6–8 hours or high for 3–4 hours.
- About 30 minutes before serving, stir in any optional ingredients.
Notes
Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat on stovetop for best results.
