Description

Warm and comforting taco soup that’s low in carbs and perfect for meal prepping.


Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken or beef broth
  • 1 cup tomato sauce
  • 1 can diced tomatoes
  • 2 tbsp taco seasoning
  • Optional toppings: shredded cheese, avocado, sour cream, jalapeños

Instructions

  1. In a skillet, cook the ground beef or turkey until browned. Drain excess grease.
  2. Toss the chopped onion and bell peppers in with the meat and cook for about 5 minutes until soft.
  3. Add the meat mixture to the Crock Pot.
  4. Pour in the tomato sauce, diced tomatoes, and broth. Stir in the taco seasoning.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  6. About 30 minutes before serving, stir in any optional ingredients.

Notes

Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat on stovetop for best results.
