Description

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 4 cups chicken broth
  • 8 ounces cream cheese
  • 1 cup grated Parmesan cheese
  • 2 cups diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Chop the onion, carrots, and celery.
  2. Mince the garlic.
  3. Combine the chicken, vegetables, and broth in the Crock Pot.
  4. Sprinkle in the Italian seasoning, add diced tomatoes, and season with salt and pepper.
  5. Cover and set the Crock Pot to low for 6–8 hours or high for 3–4 hours.
  6. Once cooking is complete, shred the chicken and return it to the pot.
  7. Stir in cream cheese and Parmesan cheese, and let sit for 10 minutes with the lid on.
  8. Ladle soup into bowls and garnish with fresh parsley or basil.

Notes

Adjust cooking time for frozen chicken; can substitute Parmesan with mozzarella. Adds spinach or kale for extra greens.
