- 1 pound boneless, skinless chicken breast
- 4 cups chicken broth
- 8 ounces cream cheese
- 1 cup grated Parmesan cheese
- 2 cups diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Chop the onion, carrots, and celery.
- Mince the garlic.
- Combine the chicken, vegetables, and broth in the Crock Pot.
- Sprinkle in the Italian seasoning, add diced tomatoes, and season with salt and pepper.
- Cover and set the Crock Pot to low for 6–8 hours or high for 3–4 hours.
- Once cooking is complete, shred the chicken and return it to the pot.
- Stir in cream cheese and Parmesan cheese, and let sit for 10 minutes with the lid on.
- Ladle soup into bowls and garnish with fresh parsley or basil.
Notes
Adjust cooking time for frozen chicken; can substitute Parmesan with mozzarella. Adds spinach or kale for extra greens.
