Ingredients

- 1 cup quinoa
- 2 cups water or vegetable broth
- 2 large carrots, grated
- 1 bell pepper, diced
- 1 cup chickpeas
- 1/2 cup green onions, sliced
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- Cook quinoa in a saucepan with water or broth for about 15 minutes.
- Prep the veggies by grating the carrots and dicing the bell pepper.
- Mix cooked quinoa, carrots, bell pepper, chickpeas, green onions, and parsley in a bowl.
- Dress the salad with a mixture of lemon juice and olive oil; season with salt and pepper.
- Add optional toasted nuts or seeds for extra crunch.

Store in an airtight container for 3 to 5 days; keep dressing separate to avoid sogginess.
